[SimplifyMe] Cheesy Pepperoni-Spinach (Pizza)

 

CHEESY PEPPERONI-SPINACH PIZZA
MAKES 4 SERVINGS OR 2 SERVINGS WITH LEFTOVERS.

2 tbs olive oil
1 bunch spinach, thick stems discarded, leaves chopped
15 oz can diced tomatoes, drained
1 clove garlic, chopped
1/2 tsp dried oregano
1/4 tsp sugar or Splenda
2 tbs grated Parmesan cheese
Salt and Pepper
Cornmeal
1 pound pizza dough, halved
2 oz pepperoni, sliced
3/4 cup grated mozzarella cheese
1/4 cup shredded Asiago cheese

Heat oven to 425 degrees. Oil a skillet. Heat 1 tbs oil in a skillet. Add spinach, cook until beginning to wilt, transfer to a plate, let cool, squeeze out moisture. *In a bowl, combine tomatoes, garlic, oregano, sugar, 1 tbs Parmesan, remaining oil, salt and pepper. On a surface dusted with cornmeal, shape each ball of dough into a 12" circle. Transfer one circle to pan. *Scatter pepperoni over dough. Top with spinach and mozzarella. Place remaining dough on spinach and cheese. Cut six slits in top of dough. *Spoon tomato mixture onto dough, then sprinkle with Asiago and remaining Parmesan. Pinch 2 overhangs together, cut away excess dough. *Brush dough with oil, bake until crust is golden brown and cheese has melted 30 min. Let cool 5 min. then transfer to a cutting board.
