CHERRY BROWNIE-CHEESECAKE BARS
MAKES 12 SERVINGS.
1 pkg brownie mix
12 oz pkg frozen cherries, chopped
5 tbs sugar or Splenda
8 oz lowfat cream cheese
1 cup heavy cream
1 tbs lemon juice
Heat oven according to brownie package. Coat a 8" square pan with cooking spray. Line pan with parchment, leaving overhang. Spray parchment. *Prepare brownie batter according to package. Fold in half the cherries, transfer batter to pan. Bake, cool according to package. *In a pan, combine 2 tbs sugar, 1 tbs water and remaining cherries. Bring mixture to a boil, then simmer until cherries break down and liquid turns into a thick syrup. Transfer to a bowl to cool, then refrigerate. *Beat cream cheese and remaining sugar in a bowl until smooth. Add cream, then beat until soft peaks form. Beat in juice. *Spread cream cheese mixture over brownie, refrigerate 3 hours. Using overhangs, remove brownie cheesecake from pan, transfer to a cutting board. Cut into pieces.
