NUTTY CHERRY COBBLER
MAKES 8 SERVINGS.
FILLING---
4 cups frozen cherries
1/2 cup sugar
2 tbs cornstarch
Pinch of salt
1/4 tsp almond extract
TOPPING---
1 1/2 cups flour
1/4 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
4 tbs unsalted butter
2/3 cup buttermilk
1/2 cup sliced almonds
1/2 cup chocolate chips
2 tbs brown sugar
Heat oven to 400 degrees. Line a baking sheet with foil. Mist a pie plate with cooking spray. MAKE FILLING---In a pan, combine cherries, sugar, cornstarch and salt, cook until sugar has dissolved. Remove from heat, stir in almond extract. Pour into pie dish. MAKE TOPPING---In a bowl, whisk together flour, sugar, baking powder, baking soda and salt. Rub in butter until mixture looks like coarse meal. Stir in buttermilk. Stir in almonds and chocolate chips. Drop dough in mounds on top of cherries. Sprinkle with brown sugar. *Place pie plate on lined baking sheet. Bake until topping is golden 40 min. SERVE warm & ENJOY...
