CHEESY BROCCOLI PIZZA
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
2 cups cooked chopped broccoli
1/2 cup grated Parmesan cheese
1 cup basil leaves
Salt and Pepper
3 tbs plus 2 tsp oil
1 tbs cornmeal
3/4 pound pizza dough
3 oz goat cheese
1 tomato
1/4 tsp red pepper flakes
*Heat oven to 475 degrees. Place Parmesan into bowl of a processor along with broccoli, 2/3 cup basil, salt and pepper, drizzle in 3 tbs oil. Process until smooth. *Sprinkle a work surface with cornmeal, roll dough into a 12" circle. Spray baking sheet with cooking spray, place dough onto it. Spread broccoli pesto over dough. Scatter cheese over top of pesto, then slice tomato, arrange slices on top. *Bake until cheese and tomatoes are softened and crust is golden brown 14 min. Garnish pizza with remaining Parmesan, basil and pepper flakes. Slice pizza into 8 wedges. SERVE & ENJOY...
