[SimplifyMe] Meatballs with Honey {Oatmeal}

 

MEATBALLS WITH HONEY OATMEAL
MAKES 4 SERVINGS. HALF RECIPE FOR 2 SERVINGS.

OATMEAL---
1 cup each milk and rolled oats
2 tbs each butter and honey
1/2 cup raisins
1/2 tsp salt
MEATBALLS---
1/2 cup each milk and grated Parmesan cheese
2 tbs each oil and chopped parsley
1 1/2 tsp each granulated onion and salt
1 1/2 cups breadcrumbs
1 1/2 pounds ground chicken
1 egg, beaten
2 cloves garlic, grated
3 tbs white wine or broth
2 tsp poultry seasoning
1 tsp crushed red pepper
3/4 tsp pepper
Pinch nutmeg

Heat oven to 400 degrees. Line 2 baking sheets with parchment. In a bowl, combine breadcrumbs with milk, then squeeze out excess liquid. In a bowl, combine chicken with breadcrumb mixture and remaining meatball ingredients. Roll chicken mixture into balls. Divide meatballs between baking sheets. Bake until golden and cooked through 18 min. *ADD 3 cups water, milk, oats, raisins, butter, salt to a pot, bring to a simmer, cook until oats are tender. Add honey. Divide oatmeal among bowls. Top each with some meatballs. SERVE with toast & ENJOY...
