CHILI COFFEE RUBBED ROAST
MAKES 8 SERVINGS.
2 tbs each instant coffee granules and orange juice
1/4 cup grated onion
2 tsp grated orange rind
1 1/2 tbs chili powder
1 1/2 tsp salt
4 garlic cloves, grated
2 pound beef roast
Heat oven to 475 degrees. Combine first 7 ingredients, massage mixture onto roast. Place roast in a roasting pan, bake 20 min. Reduce oven to 300 degrees. Bake an additional 30 min. *REMOVE roast from oven, place on a cutting board. Let rest 30 min. Wrap roast in parchment, then in plastic wrap, refrigerate 8 hours. Cut into thin slices. SERVE on sandwiches & ENJOY...
