LEMON "DAISY" CUPCAKES---Marshmallow flower petals on top of cupcakes with jelly bean flower centers. No picture, sorry.
MAKES 18 CUPCAKES.
1 pkg white cake mix
1 tbs plus 2 tsp lemon extract
8 oz pkg cream cheese
1/4 cup butter
2 tbs sour cream
16 oz pkg powdered sugar
10 drops yellow food color
18 large marshmallows
Yellow decorating sugar
Jelly beans, any color
Green sprinkles
Prepare cake mix as directed on package, adding 1 tbs lemon extract. Spoon into 18 green paper lined muffin cups. Bake as directed for cupcakes. Cool. FOR FROSTING---Beat cream cheese, butter, sour cream and remaining extract until fluffy. Beat in powdered sugar until smooth. Stir in food color. Frost cupcakes. CUT marshmallows crosswise into 5 slices. Sprinkle one side of each slice with decorating sugar. Arrange marshmallow petals on top of each cupcake to resemble a daisy. Place jelly beans in center of petals. Sprinkle green sprinkles around edge of cupcakes. SERVE & ENJOY...
