FRIED BUTTERMILK-BREADED CHICKEN
MAKES 6 SERVINGS.
1 cup flour
1/4 cup cornmeal
2 tbs paprika
1 tbs garlic powder
1/2 tsp cayenne pepper
Salt and Pepper
3/4 cup lowfat buttermilk
6 chicken thighs and 6 chicken drumsticks
Oil
In a plastic bag, combine flour, cornmeal, paprika, garlic powder, cayenne, salt and pepper. Transfer 1/4 cup mixture to a bowl. Add buttermilk, whisk to combine. Add chicken to bowl, toss, refrigerate 1 hour. *Fill a skillet with 1/4" oil, heat. Place a rack in a baking sheet. Transfer chicken to plastic bag with flour mixture. Seal, shake bag to coat chicken in flour mixture. Place chicken in skillet, cook 5 min. Turn, cook until chicken is golden brown and cooked through. Transfer to rack. Repeat with remaining chicken.
