CARROT GINGER SOUP
MAKES 6 SERVINGS.
2 tbs oil
1/2 cup chopped onion
4 cups chopped carrots, peeled
4 cups vegetable broth
1 cup orange juice
1 tbs plus 2 tsp grated peeled ginger
1 tbs lemon juice
1 3/4 cups milk
1/2 tsp salt
1/2 tsp pepper
Heat oil in a pan. Add onion, saute until translucent. Add carrots, broth, orange juice, ginger and lemon juice, bring to a boil. Simmer until carrots are tender. *Remove pan from heat. Puree soup with a blender until smooth. Return soup to pan, stir in milk, salt and pepper, heat until hot. SERVE & ENJOY...
