BROWNIE ICE-CREAM CAKE
MAKES 10 SERVINGS.
1 pkg brownie mix
1 pint no sugar added strawberry ice cream
1/2 cup heavy cream
1/4 cup sugar free chocolate syrup
Heat oven according to brownie package, coat 3 round cake pans with cooking spray. Line pans with parchment, spray parchment. Prepare brownie batter according to package. Divide mixture among pans. Bake until done 30 min. Let cool in pans, then remove. Clean one pan. *Line pan with plastic wrap so that it hangs over. Transfer ice cream to a bowl, mash until spreadable. Place on brownie layer into bottom of pan. Spread half the ice cream on top. Top with another brownie layer, then remaining ice cream. Top with remaining layer of brownie. Freeze 2 hours. *Beat cream in a bowl until medium stiff peaks form. Remove cake from pan, peel away plastic, transfer to a plate. Spoon cream on top of cake, drizzle with chocolate syrup.
