[SimplifyMe] Southwestern Stuffed {Squash}

 

SOUTHWESTERN STUFFED SQUASH
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.

Salt and Pepper
2 yellow squash
2 zucchini
1 tbs olive oil
8 oz ground turkey
1 clove garlic, minced
15 oz can black beans, drained
1 1/2 tsp chili powder
1/4 tsp cayenne pepper
1 tsp onion powder
1 tsp cumin
1 onion, chopped
1 green bell pepper, seeded, chopped
1 tomato, chopped
3 tbs taco sauce
1/2 cup shredded Cheddar cheese
1/4 cup sour cream

In a pot of boiling salted water, cook squashes until tender, drain. Trim ends, halve each squash lengthwise. Scoop out centers, chop flesh. Warm oil in a skillet. Add turkey, cook until no pink remains. STIR in squash and remaining ingredients through tomato, cook until vegetables are tender. Season with salt and pepper. Spread 1 tsp taco sauce into each squash half. Mound with filling, sprinkle with cheese. Top with sour cream. SERVE & ENJOY...
