SLAW FISH TACOS
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
2 cups shredded cabbage
2 tbs chipotle mayonnaise
Salt and Pepper
1/2 cup cornmeal
2 fish fillets, sliced into 8 strips
1 tsp seafood seasoning
1/4 cup vegetable oil
1 avocado, pitted, sliced
8 corn tortillas, warmed
1 lime, cut into wedges
In a bowl, stir together cabbage and mayo, season with salt and pepper. Place cornmeal in a bowl. Season fish with salt and pepper, rub with seafood seasoning. Dredge in cornmeal. Warm oil in a skillet. Place fish in skillet. COOK until fish is crisp and browned. Remove to paper towels. Repeat. Divide coleslaw, fish, and avocado among tortillas. SERVE with lime wedges & ENJOY...
