CORNED-BEEF WITH VEGGIES
MAKES 6 SERVINGS.
3 pound corned beef with spice packet
1 onion, quartered
1 head garlic, halved
12 oz beer
1 bay leaf
6 parsley sprigs
1 pound baby carrots
1 green cabbage, cut into wedges
1 pound green beans
Place first 6 ingredients in a pot. Add enough water to cover beef, bring to a boil. Covered, let simmer 3 hours or until tender, adding last 3 ingredients during last 30 min. Let sit 10 min. slice. SERVE with pan juices and veggies & ENJOY...
