BBQ-SAUCE CHICKEN SLOWCOOKER
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
2 tbs olive oil
8 bone in skin on chicken thighs
Salt and Pepper
1 onion, chopped
2 cloves garlic, minced
1 cup barbecue sauce
2 tbs peanut butter
Warm oil in a skillet. Season chicken with salt and pepper, add to skillet. Cook until golden brown. Remove to a slowcooker. Pour off all but 1 tbs fat from skillet. Add onion, cook until softened. Add garlic, saute 1 min. ADD barbecue sauce and peanut butter, stir until slightly thickened. Pour sauce over chicken, cook until chicken is cooked through 3 1/2 hours on low. Set temp to high, cook chicken until sauce thickens. SERVE & ENJOY...
