[SimplifyMe] Saucy Korean {Tacos}

 

SAUCY KOREAN TACOS
MAKES 4 SERVINGS. HALF RECIPE FOR 2 SERVINGS.

1 pound steak
1/4 cup plus 1 tbs rice vinegar
1/4 cup soy sauce
1/4 cup oil
3 tbs sugar
1 tbs plus 1 tsp hot sauce
2 tsp sesame oil
1/2 cup sliced onion
3 cloves garlic, sliced
2" piece ginger, peeled, sliced
1/4 tsp salt
1/2 cucumber, cut into matchsticks
8 flour tortillas, warmed

Place steak in a plastic bag. In a bowl, whisk together 1/4 cup vinegar, soy sauce, oil, 2 tbs sugar, 1 tbs hot sauce and 1 tsp sesame oil. Stir in onion, garlic and ginger. Pour into bag. Marinate in fridge 1 hour.  *In a separate bowl, whisk together remaining vinegar, sugar, hot sauce and sesame oil. Stir in salt and cucumber, refrigerate 30 min.  *Heat a pan. Remove steak from marinade, save marinade. Cook steak to desired doneness. Set aside. Add marinade to pan. Bring to a boil, cook until sauce has thickened.  *Slice steak, toss in pan with sauce. SERVE on tortillas with pickled cucumbers & ENJOY...
