YUMMY FRUIT MINI-COBBLERS
MAKES 10 SERVINGS.
12 oz pkg gluten free cornbread mix
1/3 cup sugar or Splenda
1 stick butter, melted
1/2 cup chopped pecans
6 cups blackberries
1/2 cup mixed berry preserves
1 tbs chopped candied ginger
1 quart no sugar added vanilla ice cream
Heat oven to 350 degrees. In bowl, combine cornbread mix, sugar, butter and pecans until coarse crumbs form. Transfer crumbs to greased baking sheet. Bake 12 min. or until golden brown. *In pot, bring 5 cups berries, preserves and ginger to a boil, stir to lightly mash berries. Simmer 5 min. Stir in remaining berries. Let cool. *Divide berry mixture among 10 glasses, top with crumbs and ice cream. SERVE & ENJOY...
