[SimplifyMe] Chicken Soup {Slow-Cooker}

 

CHICKEN SOUP SLOW-COOKER
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 bone in chicken breast, split, skin removed
4 carrots, cut in half crosswise
1 onion, quartered
1 lemon, halved
4 sprigs dill
4 sprigs parsley
4 cups chicken broth
2 stalks celery
3/4 cup orzo
8 oz snap peas, sliced crosswise

Place chicken, carrots, onion, and lemon in a slowcooker. Tie dill and parsley together, nestle it among chicken and vegetables. Add broth and 2 cups water, cook until chicken is cooked through and easily shreds, 8 hours on low. *30 min. before serving, transfer chicken to a bowl and carrots and onion to a cutting board. Discard lemon and herbs. Cut celery into pieces, add to slowcooker along with orzo, cook on high until orzo is tender 25 min. *Cut carrots into rounds, cut onion into pieces. Shred chicken, discarding bones. Just before serving, return chicken, carrots and onion to slowcooker along with peas, cook 3 min. SERVE with crackers & ENJOY...
