CITRUS COFFEE CHOCOLATE-MOUSSE
MAKES 6 SERVINGS.
10 oz bittersweet chocolate, chopped
8 eggs, separated
3/4 cup sugar
1/2 cup oil
1 tsp instant coffee granules dissolved in 2 tbs boiling water
1/4 tsp salt
Grated zest of 1 orange
Place chocolate in a bowl, melt in microwave until smooth. Cool slightly. Place yolks and 1/2 cup sugar in a bowl, whisk until pale yellow. Whisk in oil, coffee, salt and zest until combined. Add chocolate, whisk until smooth. *Beat egg whites in bowl until soft peaks form, sprinkle in remaining sugar, beat until stiff peaks form. Add a spoonful of egg white mixture to chocolate mixture. Stir until incorporated. Pour chocolate mixture into bowl of egg whites, fold until combined. Divide mousse into 6 dishes, cover with plastic, refrigerate. Garnish with chocolate curls.
