VEGGIE WITH CRISPY-CHIPS
MAKES 6 SERVINGS.
8 cloves garlic, sliced
1/2 cup plus 2 tbs oil
Salt and Pepper
3 bags 5 oz each spinach
Line a plate with paper towels. Place garlic and 1/2 cup oil in a pan, bring to a simmer, cook until garlic is lightly browned and crispy. Transfer garlic to plate, set aside. *Heat remaining oil in a pan. Add spinach, cook until wilted and warm. Season. Transfer spinach to a plate. Garnish with crispy garlic chips. SERVE & ENJOY...
