CHOCOLATE COVERED BANANAS
MAKES 8 SERVINGS.
4 bananas, peeled, cut in half crosswise
12 oz semisweet chocolate, chopped
1 cup shredded coconut
1 cup chopped unsalted roasted peanuts
8 lollipop sticks
Line a baking sheet with parchment. Insert a stick into each banana, place them on baking sheet. Freeze until firm 3 hours. Melt chocolate in a bowl set over a pot of simmering water until smooth. Transfer to a cup. Dip bananas into chocolate, sprinkle one side of banana with coconut and the other side with peanuts. Place bananas back on baking sheet, freeze 20 min. before SERVING & ENJOY...
