CHEESY EGGPLANT CASSEROLE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
4 tbs flour
Pepper
2 eggs, beaten
1 egg white, beaten
3/4 cup breadcrumbs
1 1/4 pounds eggplant, cut into rounds
24 oz jar marinara sauce
6 oz shredded mozzarella
6 tbs grated Parmesan
Heat oven to 450 degrees. Coat 2 baking sheets with cooking spray. On a plate, combine flour and pepper. In a bowl, whisk eggs and egg white. On another plate, spread out breadcrumbs. Coat eggplant slices with flour, then egg mixture, then breadcrumbs. Place on baking sheets. Bake 10 min. flip eggplant slices. Bake until eggplant is golden brown 10 min. *COAT an 8" square baking dish with cooking spray. Spread with 1/2 cup sauce. Arrange 1/3 of the eggplant slices in pan. Top with 1/2 cup sauce, 1/2 cup mozzarella and 2 tbs Parmesan. Repeat layering twice more. Reduce oven temp to 350 degrees. Bake until cheese melts and casserole is browned and heated through 30 min. Let rest 5 min. before SERVING & ENJOY...
