CHOCOLATE MINT BROWNIES
MAKES 8 SERVINGS.
1 1/2 sticks butter
1 3/4 cups sugar
1 1/2 tsp vanilla
1/4 tsp salt
3 eggs
1 cup unsweetened cocoa powder
1/3 cup flour
Heat oven to 350 degrees. Line an 8" square baking pan with foil. Coat foil with cooking spray. In a pan, melt butter. Off heat, whisk in sugar, vanilla, salt. Whisk until creamy. Add eggs, whisk well. *ADD cocoa, flour, stir until blended. Pour into pan. Bake brownies until done 45 min. Cool in pan. Lift brownies out of pan. Cut into squares. SERVE & ENJOY...MIX 10 oz white chocolate, melted, 1/3 cup heavy cream, 1 tsp peppermint extract, 4 drops green food color. Spread over brownies in pan, chill. Mix 7 oz bittersweet chocolate, melted, 1/2 cup heavy cream, spread over mint layer, chill.
