CHORIZO RICE-SKILLET
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
8 oz chorizo, sliced
1 onion, chopped
1 bell pepper, chopped
2 tsp chili powder
1 tbs oil
15 oz can diced tomatoes
1 1/2 cups rice
3 green onions, sliced
In skillet, cook chorizo, onion, bell pepper and chili powder in oil until softened. Stir in tomatoes, rice, and 3/4 cup water, bring to a boil. Simmer until rice is tender. Top with green onions. SERVE & ENJOY...
