ORANGE-SAUCE PORK TACOS
MAKES 6 SERVINGS.
3 1/2 pounds boneless pork shoulder, cut into pieces
3 cups orange juice
Salt and Pepper
4 ancho chiles, stemmed, seeded
2/3 cup apple cider vinegar
1 onion, chopped
4 cloves garlic
1 cup parsley
1 tsp dried oregano
1/4 tsp cumin
3 tbs oil
12 flour tortillas, warmed
Diced avocado and chopped onion
Place pork in a skillet. Add orange juice, 3 cups water, and salt, bring to a boil, simmer until most of the liquid has evaporated and meat is lightly browned. Transfer pork to a bowl, cool. Place chiles in a bowl, cover with 2 cups boiling water, soak until softened 15 min. Transfer chiles and 1 1/2 cups soaking liquid to a blender. *Add vinegar and next 5 ingredients, salt and pepper, puree until smooth. In a skillet, heat oil. Add chile puree, simmer until thickened and darker in color. Shred pork, toss in cooking liquid, simmer until meat has absorbed most of the chile sauce. Top tortillas with pork.
