HONEY-MUSTARD POTATO-SALAD
MAKES 8 SERVINGS.
3 pounds potatoes, cubed
3 tbs olive oil
1 tbs apple cider vinegar
1 1/4 cups lowfat sour cream
1/2 cup sliced green onions
1/4 cup diced red bell peppers
1 tbs honey mustard
1 tsp Mrs Dash
In pot, bring potatoes and enough salted water to cover to a boil. Simmer until potatoes are tender. Drain. In bowl, whisk together oil and vinegar. Season with salt and pepper. Add potatoes, toss. Let cool. *In bowl, combine sour cream and last 4 ingredients. Add potato mixture, toss. SERVE at room temp or cold & ENJOY...
