PATRIOTIC MOUSSE CUPS
MAKES 8 SERVINGS.
Two 14 oz pkgs tofu
1 1/4 cups grated unsweetened coconut
3 tbs coconut cream
9 tbs agave nectar
1/2 cup chopped strawberries
Red food coloring
1/2 cup blueberries
Blue food coloring
Divide tofu into 3 portions. In blender, puree 1 tofu portion, 1/2 cup coconut, coconut cream and 3 tbs agave until smooth, set aside. In blender, puree second tofu portion, 3 tbs agave and strawberries until smooth, adding red food coloring, set aside. In blender, puree blueberries, remaining agave and last tofu portion until smooth, adding blue food coloring. *Spoon tofu mixtures into separate plastic bags, close, snip corner. Pipe red, white, then blue mousses into 8 clear cups to create striped appearance. *In plastic bag, toss 1/4 cup coconut with red food coloring, sprinkle over red mousse. In separate bag, toss 1/4 cup coconut with blue food coloring, sprinkle over blue mousse. Sprinkle remaining plain coconut over white mousse. Chill 30 min. SERVE & ENJOY...
