[SimplifyMe] Spicy Hot {Chicken}

 

SPICY HOT CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

BRINE---
1 whole chicken, cut into quarters
Salt and Pepper
DIP---
1 cup milk
2 eggs
1 tbs hot sauce
DREDGE---
2 cups flour
Salt
Oil
SPICY COATING---
1/2 cup lard, melted
3 tbs cayenne
1 tbs brown sugar
Salt and Pepper
1/2 tsp paprika
1/2 tsp garlic powder
Pickle slices

In a bowl, toss chicken with salt and pepper, refrigerate overnight. MAKE DIP AND DREDGE---In a bowl, whisk together milk, eggs and hot sauce. In a separate bowl, whisk together flour and salt. Dredge chicken in flour, then dip in milk, then in flour. *Heat lard in a skillet. Set a wire rack on top of a baking sheet, set aside. Lower chicken into skillet, fry until crisp. Remove chicken, let drain on rack. MAKE SPICY COATING---Ladle lard into a bowl, whisk in cayenne, brown sugar, salt, pepper, paprika and garlic powder. Baste spice mixture over chicken. SERVE immediately, garnish with pickles & ENJOY...
