ORANGE QUINOA SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
Cook 1 1/2 cups quinoa in 3 1/2 cups simmering water 15 min. let cool. Toss with 1 bunch chopped green onions, 1 sliced fennel bulb, segments from 1 orange, 1/4 cup each oil and orange juice, season. Top with fennel fronds. SERVE & ENJOY...
