BUTTERSCOTCH BARS WITH NUTS
MAKES 8 SERVINGS.
15 whole graham crackers, broken up
3 tbs sugar
Pinch of salt
6 tbs unsalted butter, melted
11 oz pkg butterscotch morsels
1/2 cup peanut butter
1 cup chopped salted roasted peanuts
Line a 8" square baking pan with foil, allowing ends to overhang. Process graham crackers with sugar and salt in a processor or blender until ground. Pulse in butter. Transfer to pan, press crumbs down evenly. *Place butterscotch morsels in a bowl, microwave on high 1 min. Remove, stir until smooth. Stir in peanut butter and peanuts. Spread over crust, chill 1 hour 30 min. Lift bars out, remove foil. CUT INTO SQUARES, SERVE & ENJOY...
