CHAI PUDDING WITH NUTS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
2 cups milk
4 chai tea bags
2 tbs plus 1 1/2 tsp cornstarch
1/2 cup sugar
2 eggs
1 tbs unsalted butter
1 tsp vanilla
1/2 cup toasted shelled pistachios, chopped
Whipped cream
Cinnamon
Bring milk to a simmer in a pan, remove from heat, add tea bags, set aside to steep 10 min. Combine cornstarch and sugar in a bowl. Whisk in eggs. Remove tea bags, squeeze bags, add tea to cornstarch mixture. Pour back into pan, whisk until thickened. Remove from heat, stir in butter and vanilla. *Pour pudding into 4 bowls. Cover each, pressing plastic directly onto surface. Refrigerate 2 hours. Add a dollop of whipped cream, dust with cinnamon. Sprinkle with pistachios. SERVE COLD & ENJOY...
