SAUCY HERB CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
4 tbs oil
4 boneless skinless chicken breast halves
Salt and Pepper
2 tbs flour
1/2 cup each chicken broth and white wine
16 sage leaves
1 cup grated Parmesan cheese
Warm 2 tbs oil in a skillet. Season chicken with salt and pepper. Add to skillet, cook until golden. Remove to a plate. Add remaining oil to skillet. Sprinkle flour over, cook until mixture is golden. *Whisk in broth and wine. Bring to a simmer, add chicken to skillet. Place 4 sage leaves on top of each breast half, sprinkle with cheese. Simmer until chicken is cooked through. SERVE with sauce & ENJOY...
