COCONUT BERRY SHORTCAKE STARS
MAKES 8 SERVINGS.
2 1/4 cups flour
3/4 cup sweetened shredded coconut
3 tsp baking powder
3/4 tsp salt
8 tbs butter, cubed
1 tsp coconut extract
3/4 cup milk
2 tbs sugar
2 1/2 cups mixed berries
3 tbs orange juice
2 1/4 cups heavy cream
Heat oven to 400 degrees. In processor, combine flour, coconut, baking powder and salt. Process 10 seconds. Add butter, pulse until butter is the size of peas. Add coconut extract and milk, pulse until dough comes together. *On floured surface, pat out dough to 1/2" thickness. Fold in half, repeat, pat out dough to 1/4" thickness. With 3" star cutter, cut out 16 stars. Transfer to greased baking sheet. Sprinkle tops with sugar. Bake 10 min. Let cool. *In bowl, macerate berries in juice 15 min. Beat cream until soft peaks form. Dollop half of shortcakes with whipped cream. Top with berries and remaining shortcakes and whipped cream. SERVE & ENJOY...
