VEGGIE SOUP SHOOTERS
MAKES 12 SHOOTERS.
1 pound beets, peeled, cut into pieces
2 tomatoes, chopped
1 clove garlic, minced
Pinch of ground cloves
2 cups chicken broth
Salt and Pepper
1 1/4 cups plain yogurt
1 tbs horseradish
Dill
Combine first 7 ingredients and 4 cups water in a pot. Bring to a boil, simmer until beets are tender. Puree soup in a blender until smooth, transfer to a bowl. Whisk in 1/2 cup yogurt, season. Let soup cool slightly, refrigerate until cold. *Mix remaining yogurt with horseradish in a bowl, season. SERVE in shot glasses, top with horseradish yogurt and dill & ENJOY...
