CHOCOLATE SANDWICH COOKIES
MAKES 2 DOZEN.
1/4 cup butter
4 oz cream cheese
2 eggs
1 tsp vanilla
1 pkg chocolate cake mix
1/4 cup flour
FILLING---
3/4 cup peanut butter
4 oz cream cheese
2 1/2 cups powdered sugar
3 tbs milk
1 tsp vanilla
12 miniature peanut butter cups, chopped
In a bowl, cream butter and cream cheese until fluffy. Beat in eggs and vanilla. Add cake mix and flour to creamed mixture, mix well. Shape into 1" balls. Place on ungreased baking sheets, flatten slightly. Bake at 375 degrees for 8 min. or until set. Cool 1 min. before removing from pans. FOR FILLING---Beat peanut butter and cream cheese in a bowl until fluffy. Add powdered sugar, milk and vanilla, beat until smooth. Spread on bottoms of half of the cookies, sprinkle with peanut butter cups. Top with remaining cookies. SERVE & ENJOY...
