BERRY CHEESECAKE PIE
MAKES 8 SERVINGS.
Beat 8 oz cream cheese, 1 cup powdered sugar, zest of 1 lemon, 1 tsp vanilla and 1/4 tsp salt until smooth. Dissolve 1 tsp unflavored gelatin powder in 1 tbs hot water, beat into cream cheese mixture along with 1 1/4 cups plain Greek yogurt. *Pour into a 9" graham cracker crust. Refrigerate until set. Microwave 2 tbs honey 20 seconds. Stir in 1 tbs lemon juice, then toss with 2 cups sliced strawberries, spoon around edge of pie. SERVE & ENJOY...
