[SimplifyMe] Beet Pistachio {Salad}

 

BEET PISTACHIO SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

Toss 6 chopped cooked beets with 1/2 cup each chopped pistachios and parsley, 1/4 cup each sherry vinegar and oil, season. Top with crumbled goat cheese. SERVE & ENJOY...
