PORK PEA NOODLE-SALAD
MAKES 6 SERVINGS.
1/4 cup lime juice
1/4 cup rice vinegar
3 tbs sugar
1 tbs soy sauce
1 clove garlic, minced
Salt
16 oz pkg rice noodles
1 1/2 cups snow peas, trimmed
1 tbs oil
2 pork chops, sliced
1/4 cup chopped mint
Bring a pot of water to a boil. In a bowl, whisk together lime juice, vinegar, sugar, soy sauce, garlic and salt. *Add noodles to pot with boiling water, cook until noodles are tender. During last minute of cooking, add peas to pot. Drain, transfer to a bowl. *Warm oil in a skillet. Sprinkle pork with salt. Stir fry until meat loses its pink color. Transfer meat to bowl with noodles and peas. *Drizzle dressing over noodle mixture, sprinkle with mint, toss. SERVE immediately & ENJOY...
