VANILLA BEAN ICE-CREAM
MAKES 1 QUART.
3 cups heavy cream
1 cup milk
1 vanilla bean, split lengthwise, seeds scraped out
10 egg yolks
1 cup sugar
Pinch of salt
Combine cream, milk, vanilla pod and seeds in a pan. Bring to a simmer, then remove from heat. Whisk yolks, sugar, and salt in a bowl. Ladle half of the cream mixture into egg mixture, whisk, return to pan with remaining cream mixture. Cook until custard is thick. *Strain custard into a blender, discard vanilla pod. Puree until frothy, pour back into bowl. Cover with plastic, refrigerate 3 hours. Transfer custard to an ice cream maker, churn according to manufacturers instructions. Transfer to a container, freeze until firm. SERVE & ENJOY...
