HAM WITH SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/3 cup each mayonnaise and sour cream
1/4 cup chopped chives
1 tbs whole grain mustard
1 cup rice
Salt and Pepper
2 bunches asparagus, trimmed, cut into pieces
Juice of 1 lemon, plus wedges
1 tbs unsalted butter
4 ham steaks
2 tbs brown sugar
Mix first 4 ingredients in a bowl. Bring a pan of water to a boil. Add rice, salt and pepper, simmer until rice and asparagus are tender. Drain. Transfer to a bowl, stir in lemon juice and half of the chive sauce, season with salt and pepper. *Heat butter in a skillet. Add ham, cook until golden. Sprinkle brown sugar over ham, cook until sugar melts. Season with pepper. SERVE with rice salad, remaining chive sauce and lemon wedges & ENJOY...
