[SimplifyMe] Spicy Lamb {Stir-Fry}

 

SPICY LAMB STIR-FRY
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 pound leg of lamb, sliced
3 cloves garlic, sliced
2 tbs low sodium soy sauce
1 tbs cumin
1 tsp crushed red pepper
3 tbs canola oil
1 onion, sliced
1/2 pound carrots, sliced
3 cups cooked brown rice
1/2 cup cilantro or parsley

In a bowl, combine lamb, garlic, soy sauce, cumin and red pepper. Let marinate 10 min. In a skillet, heat 1 tbs oil. Cook onion and carrots until tender, transfer to a bowl. *In same skillet, heat remaining oil. Add lamb, cook until browned on bottom, then cook until cooked through. Add onion and carrots, cook until warmed through. SERVE with rice, garnish with cilantro & ENJOY...
