LESS-OIL BUTTERMILK FRIED-CHICKEN
MAKES 8 SERVINGS.
2 frying chickens, cut into pieces, skin removed
6 cups unsalted chicken broth
4 tbs seasoning salt
6 cups canola oil
2 cups lowfat buttermilk
2 tsp hot sauce
3 cups crushed crispy brown rice cereal
2 tbs minced oregano
In pot, combine chicken, broth, 1 tbs seasoning salt and water to cover chicken. Bring to a boil, simmer until chicken is done. Drain. In pot, heat oil. In bowl, combine buttermilk and hot sauce. *In separate bowl, combine cereal, oregano and remaining seasoning salt. Dip chicken in buttermilk mixture, then cereal mixture, turning to coat. Fry until golden. Drain. SERVE & ENJOY...
