COUNTRY PAN-FRIED CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 whole chicken, cut into 8 pieces
Salt and Pepper
1 tsp garlic powder
Canola oil
2 cups lowfat milk
3 eggs
2 cups flour
In a bowl, season chicken with salt and pepper and garlic powder. Cover, refrigerate overnight. Pour 1/2" oil into a skillet, heat. Set a wire rack on top of a baking sheet, set aside. In a bowl, whisk together milk and eggs. Place flour in a separate bowl. Dip chicken in egg wash, then dredge in flour. *Place chicken in skillet, fry to brown and until chicken is cooked through. Drain on rack. SERVE hot or room temp & ENJOY...
