CHEESY BAKED-POTATO SOUP
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1/2 cup each flour, sour cream and sliced green onions
1/4 tsp each salt and pepper
3 cups milk
2 large potatoes, baked, peeled, cubed
1/3 cup plus 2 tbs shredded cheddar cheese
In a pan, whisk flour and milk until smooth. Bring to a boil, cook until thickened. Stir in potatoes, 1/3 cup cheese, salt and pepper. Cook 3 min. *Remove from heat. Stir in sour cream and 1/4 cup onions, cook 12 min. Garnish with remaining cheese and onions. SERVE & ENJOY...
