EASY SOUR-CREAM WAFFLES
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3/4 tsp baking soda and salt
3/4 cup each sour cream and milk
2 cups cake flour
1 1/2 tsp baking powder
2 eggs, separated
1 tsp vanilla
1 stick unsalted butter, melted
1/4 cup vegetable shortening, melted
2 tbs dark brown sugar
Maple syrup
Heat a waffle iron. Whisk flour, baking powder, baking soda and salt in a bowl until combined. Whisk sour cream, yolks, milk and vanilla in a bowl until smooth. Whisk in butter and shortening. *Beat egg whites in a bowl until soft peaks form. Sprinkle in brown sugar, continue beating until stiff peaks form. *Make a well in center of flour mixture, whisk in sour cream mixture until combined. Fold in beaten egg whites. *Brush waffle iron with butter. Add 1/2 cup batter, cook until golden brown. Repeat with remaining batter. SERVE with syrup & ENJOY...
