FISH SANDWICHES WITH SLAW
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 bunch green onions, trimmed, cut into thin strips
6 ribs celery, cut into thin strips
4 fish fillets
Salt and Pepper
1/2 cup flour
1 tsp chopped dill
3 eggs
3 tbs lemon juice
3 tbs olive oil
2 tbs butter
1 lemon, sliced into rounds
1/4 head lettuce, shredded
8 slices wheat bread
Place green onions and celery in a bowl of ice water. Soak until vegetables curl. Season fish with salt and pepper. On a plate, mix flour and dill. In a bowl, whisk egg and 1 tbs lemon juice. *In a skillet, heat 1 tbs oil. Melt butter in oil. Dredge fish in flour, then coat in egg mixture. Cook until coating is golden and fish is opaque. Transfer fish to a plate. Add lemon slices to skillet, cook until browned. *Drain green onions and celery. In bowl, toss green onions and celery with lettuce and remaining lemon juice and oil, season with salt and pepper. Divide slaw among 4 bread slices. Add fish, lemon slices and remaining bread slices.
