YUMMY QUINOA SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 cup quinoa
2 cups chicken broth
1 lemon, zested, juiced
1/2 cup drained diced roasted red bell peppers
1/4 cup dried cranberries
2 tbs minced onions
1 tbs minced basil
In pot, bring quinoa and broth to a boil. Simmer 20 min. Transfer to bowl. Toss with 1 tbs lemon juice, 1 tbs lemon zest and remaining ingredients. SERVE & ENJOY...
