TOMATOES WITH FISH
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
WARM 1 tbs oil in a skillet. Season 4 fish fillets on both sides with salt and pepper. Cook fish until opaque and lightly browned. Transfer to a plate, tent with foil to keep warm. ADD 2 tbs oil to skillet. Add 3 cloves garlic, minced, saute 30 seconds. Stir in 1 1/2 cups cherry tomatoes, halved, 1/2 cup chopped parsley and 2 tbs capers, drained. Cook until tomatoes have softened. Season with salt and pepper, spoon over fish. SERVE & ENJOY...
