SPICY-SWEET RELISH
MAKES 4 CUPS.
2 zucchini, chopped
1 red bell pepper, seeded, chopped
1 onion, chopped
1 rib celery, chopped
2 tbs salt
3/4 cup cider vinegar
1 cup sugar
1/2 tsp each celery seed and turmeric
1/4 tsp each mustard seed, ground mustard, allspice and pepper
Pinch of ground cloves
Pulse zucchini, bell pepper, onion and celery together in a processor or blender until all are in tiny pieces, don't puree. Transfer to a bowl, stir in salt. Let stand 30 min. Rinse vegetables in a sieve under cold water. Squeeze liquid out. *Combine vinegar, sugar and spices in a pan, bring to a boil, stir to dissolve sugar. Stir in vegetables, simmer until mixture is thick and liquid has evaporated. Transfer to a jar, let cool, refrigerate until ready to use. SERVE & ENJOY...
