PEACH-BERRY FLOATS
MAKES 8 SERVINGS.
3 1/2 cups berries
1 1/4 cups sugar or Splenda
1/2 tsp lemon juice
1/2 tsp vanilla
2 liters seltzer
2 pints peach ice cream
Whipped cream
In a pan, bring 3 cups berries, 1 cup sugar and 1 cup water to a boil, stirring until sugar dissolves, simmer until mixture thickens. Strain over a bowl, discard solids. Stir lemon juice and vanilla into berry syrup. *PLACE remaining berries in a bowl. In a pan, bring remaining sugar and 1/4 cup water to a simmer, stir until sugar dissolves. Pour mixture over berries, let stand until they release their juices. *DIVIDE berry syrup and seltzer among 8 tall glasses, stir to combine. Add 2 scoops ice cream to each glass, garnish with whipped cream and berry topping. SERVE & ENJOY...
