SPICY HERB POTATOES
MAKES 6 SERVINGS.
1 3/4 pounds sweet potatoes
4.5 oz can chopped green chiles, drained
1/4 cup minced green onions
2 tsp minced thyme
1 tsp chili powder
Prick potatoes several times, place on plate. Cover with damp paper towel. Microwave until tender. Let sit until cool enough to handle, peel potatoes. In processor or blender, puree potatoes, transfer to bowl. Stir in last 4 ingredients. Season with salt and pepper. SERVE & ENJOY...
